Heat
oven to 350°F.
Spray 9-inch square metal baking pan with cooking spray.
In
large bowl, combine flour, wheat germ, sugar, pumpkin pie
spice, baking soda and salt; mix well. In medium bowl, combine
buttermilk, molasses, applesauce, oil and egg whites; mix
well. Add to flour mixture; mix by hand just until dry ingredients
are moistened. (Do not overmix.) Pour into baking pan.
Bake
45 to 50 minutes or until wooden pick inserted in center comes
out with a few moist crumbs sticking to it. Serve warm with
additional applesauce or yogurt, if desired.
